3/16/2024.  Indulging in Homemade Comfort: A Cherry Pie Delight

Hey there, fellow pie enthusiasts! Today, I’m inviting you into my cozy kitchen for a little slice of heaven as we whip up one of my all-time favorite desserts: cherry pie. There’s something undeniably comforting about the sweet aroma of cherries mingling with buttery pastry crust, filling the air with anticipation and nostalgia.

As I roll out the dough and carefully arrange the cherries, I can’t help but reminisce about the simple joys of home baking. There’s a certain magic in transforming humble ingredients into a masterpiece that warms both the heart and the soul. And let’s be honest, who can resist a flaky, golden crust enveloping a luscious filling bursting with juicy cherries?

But for now, let’s focus on the task at hand: savoring every moment of creating this cherry pie masterpiece. So grab your apron, preheat the oven, and let’s dive into the joy of homemade comfort together.

And as promised, here’s a sneak peek of the recipe for my signature cherry pie:

Ingredients:

  • 2 pie crusts (homemade or store-bought)
  • 4 cups fresh or frozen cherries, pitted
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • Granulated sugar, for sprinkling

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cherries, sugar, cornstarch, almond extract, and lemon juice. Stir until the cherries are evenly coated.
  3. Roll out one pie crust and place it in the bottom of a 9-inch pie dish. Spoon the cherry filling into the crust, spreading it out evenly. Dot the filling with small pieces of butter.
  4. Roll out the second pie crust and place it over the cherry filling. Trim any excess dough and crimp the edges to seal the pie.
  5. Brush the top crust with the beaten egg and sprinkle with granulated sugar.
  6. Using a sharp knife, make several small slits in the top crust to allow steam to escape.
  7. Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Allow the pie to cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream for the ultimate indulgence!
